Ingredients
- the sauce:
- 1/4 to 1/2 lb butcher quality bacon chopped
- 1/2 an onion yellow or white
- 2 carrots grates
- 1 rib celery chopped
- 2 tlbsp olive oil
- put all into skillet and stir on med hi til bacon and onion are dark and flavorful.
- add: 1 red bell pepper chopped
- 3 cloves of garlic chopped
- 1 can 16 oz fire roasted crushed tomatoes
- 1 8 oz can tomato sauce
- 2tsp tomato paste for richness
- salt
- pepper
- oragano 2 tsp
- the rest:
- 1 lb mozzerella cheese
- 1/2 lb chedder cheese like tilimook
- 4 handfuls of spinach
- lasagna noodles
