- 1/2 cup #1 Burghul (fine cracked wheat) #2 will work but not traditional.
- 1/2 cup red onion chopped fine
- 1/2 Tsp ground cinnamon
- 1/2 Tsp fresh ground pepper
- 1 - 2 Tsp salt
- 3 Cups finely chopped flat leaf parsley
- 1/2 Cup finely chopped scallions
- 2 Cups finely chopped tomatoes
- 1/2 Cup orange Lentils (Soaked Overnight)** Optional
- 1 1/2 Cups finely chopped mint leaves (Preferably Mediterranean)
- 1/2 cup lemon juice
- 3/4 cup Good extra virgin olive oil
- Young Fresh grape leaves for dipping (In season)
- Small Romaine Leaves for dipping
- Fresh Arabic bread (Pita) cut into quarters or eighths

Tabbouleh Is Another Lebanese National Dish. A Fresh Summer Wheat Salad Lends Itself Well To Variations. One Key Is To Have The Greens, Wheat And Lentils As Dry As Possible Before Assembly. Wet Ingredients Are This Salad's Worst Enemy.
