Creole Surf And Turf Salad Recipe

Ingredients

  • 1 filet or other high quality steak, about 4-6oz
  • kosher or sea salt and fresh ground black pepper
  • olive oil
  • about 4 cups mixed baby greens
  • 1/2 cup french fried onions
  • For Creole Remoulade crab Salad
  • 8oz premium crab meat(or lobster)
  • 1 stalk celery, finely chopped
  • 1-2 jalapenos finely diced(I used 2 hot reds)
  • 2 green onions, sliced
  • 2t fresh dill, chopped
  • 2t Old Bay Seasoning
  • 1t Cajun or creole seasoning
  • 1/2 cup mayonnaise(more if needed for consistency)
  • 1T creole mustard
  • dash of hot sauce(Louisiana or Tabasco)
  • squirt of fresh lemon juice
  • For Dressing
  • 1 1/2T balsamic vinegar
  • 1T fresh lemon juice
  • grated onion or shallot(I used 2 large green onions, whites only, but any oniony ingredient would work ;)
  • 2t worcestershire sauce
  • 1T creole mustard
  • 1/2cc salad quality olive oil
  • kosher or sea salt and fresh ground black pepper
