  • 8 cups chicken stock
  • 1 pound Prince Edward Island Mussels, cleaned and prepped
  • 2 large leeks, white part julienned
  • 1 carrot, spaghetti-cut, or fine julienne
  • Salt and white pepper to taste
  • Canola oil to cook
