- Salt and freshly ground black pepper
- 1/2 cup olive oil
- 2 teaspoons minced garlic
- 1 tablespoon mint
- 1/4 cup fresh lemon juice, or to taste
- 2 cups dry white wine
- 2 teaspoons finely chopped fresh parsley leaves
For the Sauce:
- 1 cup drained bottled pitted sour cherries, plus 1/2 cup syrup
- 2 tablespoons sugar
- 2 tablespoons dry white wine
- 1 teaspoon cornstarch
- 1 teaspoon chives
For the Elephant Garlic Chips:
- 3 cups thinly sliced elephant garlic
- Canola oil, for frying
