Ingredients

For the mayonnaise/cheese mixture:

For the patties:

  • 1 cup Shiraz (recommended: Sutter Home)
  • 1/2-ounce dried porcini mushrooms
  • 2 pounds ground lamb
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • Extra-virgin olive oil, for brushing grill rack (recommended: Colavita)
  • 6 Italian-style bolo rolls or other rustic buns, split
  • 12 thin slices sopressata, Italian salami variety
  • 1 cup loosely packed baby spinach leaves
  • 6 large tomato slices
