- 1/4 pound pancetta, small dice
- 1/2 cup minced shallots
- 1 cup arborio rice
- 2 teaspoon finely chopped fresh sage leaves
- 1 teaspoon finely chopped fresh thyme leaves
- 1/2 cup white wine
