- 2 tablespoons olive oil
- 1 cup fresh sweet corn kernels, from 1 medium-size ear
- 2 tablespoons minced shallots
- 1 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2 large eggs
- 1 cup heavy cream
- 3/4 cup yellow cornmeal
- 1/2 cup bleached all-purpose flour
- 1/2 cup masa harina flour
- 2 teaspoons baking powder
- 1/8 teaspoon cayenne
- 3/4 cup water
- 2 teaspoons vegetable oil
- 1 teaspoon Creole Seasoning, recipe follows
For the Salmon Salad:
- 1 (8-ounce) house-smoked salmon fillet, skin off
- 6 large hard-boiled eggs
- 1 tablespoon capers, finely minced
- 1 teaspoon caper juice
- 1/4 to 1/2 cup mayonnaise
- Salt
- Freshly ground white pepper
- 1 (7-ounce) tin Beluga Caviar
- 2 tablespoons chopped chives
