Sweet Potato and Parsnip Latkes with Chunky 5-Spice Applesauce
Ingredients
For the Chunky 5-spice Applesauce:
- 6 MacIntosh or Granny Smith apples, peeled, cored and cut into 1-inch chunks
- 1 tablespoon lemon juice
- 1 tablespoon apple cider
- 1 teaspoon lemon zest
- 1/2 teaspoon Chinese 5-spice powder
- 1 tablespoon sugar
For the Latkes:
- 1 pound sweet potatoes, peeled
- 1/2 pound parsnips, peeled
- Salt
- 1/4 cup flour
- 2 large eggs
- 1/4 cup vegetable oil
To finish:
- Sour cream
- 1/4 cup green onions, sliced thinly on the bias
