Sweet Potato and Parsnip Latkes with Chunky 5-Spice Applesauce

Ingredients

For the Chunky 5-spice Applesauce:

  • 6 MacIntosh or Granny Smith apples, peeled, cored and cut into 1-inch chunks
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider
  • 1 teaspoon lemon zest
  • 1/2 teaspoon Chinese 5-spice powder
  • 1 tablespoon sugar

For the Latkes:

  • 1 pound sweet potatoes, peeled
  • 1/2 pound parsnips, peeled
  • Salt
  • 1/4 cup flour
  • 2 large eggs
  • 1/4 cup vegetable oil

To finish:

  • Sour cream
  • 1/4 cup green onions, sliced thinly on the bias
