  • 2 garlic cloves, peeled
  • 2 pounds fresh duck livers, cleaned of any green bile (fresh chicken livers may be substituted)
  • 3 tablespoons finely diced shallots
  • 4 tablespoons sugar
  • 1/2 cup balsamic vinegar
  • 1/4 cup chopped parsley leaves
  • Salt and pepper
