- Kosher salt and freshly ground black pepper

- 1 (6-ounce) can tomato paste
- 1 cup red wine
- 1/2 cup water
- 1 bay leaf
- 1 teaspoon dried thyme

- 1 clove garlic, minced
- 1 bunch black or green kale, trimmed and sliced
- 1/2 cup water
- 1 date, minced
