Acorn Squash Bisque


1 tablespoon peanut oil
1/3 cup finely chopped onions
1/3 cup finely chopped celery
1 teaspoon fresh thyme
1 bay leaf
3 medium size acorn squashes (about 3 pounds)
salt to taste
freshly ground black pepper
about 1 quart Basic Chicken Stock (see recipe), or low-sodium canned
2 tablespoons toasted acorn squash seeds, (optional)
