Grilled Pork Rib Roasts with Green Beans and Onions

Ingredients

PORK

  1. 1 quart water
  2. 2 cups soy sauce
  3. 1 cup pure Grade B maple syrup
  4. 1/4 cup kosher salt
  5. Two 5-bone pork rib roasts, about 4 pounds each

SPICE BROTH

  1. One 750-milliliter bottle floral white wine, such as Gewürtztraminer
  2. 1/2 cup rice vinegar
  3. 1/2 cup soy sauce
  4. 1/3 cup pure Grade B maple syrup
  5. 1/4 cup honey
  6. 4 star anise pods
  7. 3 whole cloves
  8. Three 3-inch cinnamon sticks, broken
  9. 1 tablespoon fennel seeds
  10. 1 tablespoon whole black peppercorns
  11. 2 teaspoons cumin seeds
  12. 6 large mint sprigs
  13. 1 1/2 teaspoons cornstarch dissolved in 1 tablespoon of water
  14. Salt

ONIONS

  1. 2/3 cup extra-virgin olive oil
  2. 6 medium onions, sliced 1/4 inch thick
  3. 1 large head of garlic, cloves peeled and thinly sliced
  4. 1 fresh red Thai chile with seeds, thinly sliced
  5. Salt and freshly ground pepper
  6. 1 pound thin green beans
