Fish-and-Shellfish Chowder

Ingredients

  1. 2 medium red potatoes, peeled and cut into 1/2-inch dice
  2. 2 cups water
  3. 2 tablespoons extra-virgin olive oil
  4. 1 medium onion, finely diced
  5. 2 garlic cloves, minced
  6. 1/2 cup dry white wine
  7. 2 dozen mussels, scrubbed
  8. 16 littleneck clams, scrubbed
  9. 2 slices of bacon, finely diced
  10. 1 celery rib, finely diced
  11. 1 tablespoon all-purpose flour
  12. 1 cup heavy cream
  13. 6 ounces skinless salmon fillet, cut into 1-inch cubes
  14. 6 ounces cleaned monkfish fillet, cut into 1-inch cubes
  15. Salt and freshly ground pepper
  16. 2 tablespoons chopped parsley
