Baked Salmon Croquettes


  • 1 can (14-3/4 ounces) cooked red sockeye salmon, drained, larger bones and skin removed
  • 1/2 cup Simply Potatoes® Sour Cream and Chive Mashed Potatoes
  • 1/2 cup finely chopped celery
  • 1/2 cup finely shredded carrot
  • 1/3 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 1 egg
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground pepper
  • 2 tablespoons dry bread crumbs
  • Dilled Sour Cream Sauce* or plain sour cream to taste
