- 5 large celery ribs, finely chopped
- 1 large green bell pepper--cored, seeded and finely chopped
- 2 bay leaves
- 4 cups chicken stock or canned low-sodium broth
- 4 cups water
- 1 pound dried kidney beans, picked over and rinsed
- 1/4 cup finely chopped flat-leaf parsley
