Garlic and Egg Drop Soup with Crab

Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 4 slices firm white bread, crusts removed, bread cut into 1-inch dice
  3. 4 garlic cloves, minced
  4. 1/4 teaspoon crushed red pepper
  5. 6 cups chicken stock or canned low-sodium broth
  6. 2 large eggs, lightly beaten
  7. 1/4 pound fresh lump crabmeat, picked over (3/4 cup)
  8. 2 tablespoons minced cilantro or flat-leaf parsley
  9. Salt and freshly ground pepper
