Salmon Potpies

Ingredients

  1. 14 ounces chilled all-butter puff pastry
  2. 1 1/2 cups plus 2 tablespoons heavy cream
  3. Two 8-ounce bottles of clam juice
  4. 2 cups water
  5. 1/2 pound tiny new potatoes, scrubbed
  6. 1 1/2 pounds skinless salmon fillet, cut into 1-inch dice
  7. 3 tablespoons all-purpose flour
  8. 2 tablespoons butter, softened
  9. 1/4 pound thickly sliced bacon, cut into 1/4-inch dice
  10. 1 medium onion, finely chopped
  11. 1 pound celery root, peeled and cut into 1/4-inch dice
  12. 3 tablespoons chopped dill
  13. 2 tablespoons chopped parsley
  14. 1 1/2 tablespoons fresh lemon juice
  15. 1 teaspoon finely grated lemon zest
  16. Salt and freshly ground pepper
