Ingredients

  1. 3/4 pound sliced bacon
  2. 1 1/2 pounds Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
  3. 1/4 cup cider vinegar
  4. 2 teaspoons Dijon mustard
  5. 1/2 cup extra-virgin olive oil
  6. Salt and freshly ground pepper
  7. 1 pint cherry tomatoes, halved
  8. 1 heart of romaine lettuce, thickly sliced (4 cups)
  9. 2 scallions, thinly sliced
