Halibut with Swiss Chard, Leek and Pepper Stew

Ingredients

  1. 1 tablespoon extra-virgin olive oil
  2. 1 large Spanish onion, chopped
  3. 1 large leek, white and tender green parts, halved lengthwise and sliced crosswise 1/4 inch thick
  4. 4 large garlic cloves, thinly sliced
  5. 1/2 cup dry white wine
  6. 1/2 medium butternut squash, peeled and cut into 3/4-inch dice
  7. 1/2 pound Swiss chard, stems discarded, leaves torn into large pieces
  8. 1 red bell pepper, cut into 3/4-inch dice
  9. 1 yellow bell pepper, cut into 3/4-inch dice
  10. 1/2 teaspoon fennel seeds
  11. 1/2 teaspoon dried thyme
  12. 1/4 teaspoon crushed red pepper
  13. Salt and freshly ground pepper
  14. Four 6-ounce skinless halibut fillets
  15. 1/2 cup shredded basil leaves
