Ingredients

  2. 1/3 cup sugar
  3. Pinch of salt
  4. 1 stick (4 ounces) unsalted butter, cut into small pieces and chilled
  5. 1 large egg
  6. 3 tablespoons milk

FILLING

  1. 1 1/2 cups sugar
  2. 1/2 cup water
  3. 6 tablespoons unsalted butter, cut into 6 pieces
  4. 12 fresh Black Mission figs, halved
  5. Raspberry Sorbet
