Beer Brined Chicken with Giblet Gravy

Ingredients

  • 4 cups apple cider
  • 1 cup packed brown sugar
  • 1 cup kosher salt
  • 2 tablespoons black peppercorns
  • 1 teaspoon juniper berries
  • 2 bay leaves
  • 1 cinnamon stick
  • 1/2 teaspoon whole cloves
  • 8 cups dark beer
  • 1 (4 to 5 pound) roasting chicken, well rinsed and patted dry, giblets reserved and chopped
  • 1 1/2 cups diced yellow onions
  • 3/4 cup diced celery
  • 3/4 cup diced carrots
  • 3 cloves garlic, peeled and smashed
  • 4 tablespoons unsalted butter
  • 4 teaspoons Essence
  • 2 teaspoons olive oil
  • 4 teaspoons all-purpose flour
  • 1/4 cup dry white wine
  • 1 1/2 cups chicken stock, or chicken broth
  • 1 tablespoon chopped fresh parsley
