  • 2 tablespoons minced shallots
  • 1 teaspoon salt, in all
  • 8 turns fresh ground black pepper
  • 2 eggs
  • 1 cup heavy cream
  • 3/4 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 masa flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon cayenne pepper
  • 3/4 cup water
  • 3 ounces of caviar
  • 1/4 cup chopped egg yolks
  • 1/4 cup chopped egg whites
  • 1/4 cup minced red onions
  • 1/4 cup capers
  • 1 cup chive sour cream
