½ pineapple cut into 1½ inch chunks
8 six-inch corn tortillas, warmed
1 15 oz. can black beans rinsed
2 green onions thinly sliced
2 tbsp. olive oil
1 tbsp. fresh lime juice
Salt and pepper
1 avocado
Homemade salsa verde or your favorite brand/HERDEZ® Salsa Verde
½ tsp. ground coriander
¼ tsp. cayenne pepper
Cilantro
Hot sauce
Marinade for Shrimp (can be as simple as ground cumin, cayenne, salt/pepper, olive oil and lime juice.  But we like a little sweet and heat)
1 tbsp. soy sauce
2 teaspoons olive oil
¼ tsp. fish sauce
2 tsp. brown sugar
1 clove grated garlic
1 inch fresh grated ginger
1 squirt of fresh lime juice
¼ tsp. chili paste, Sambal Oelek
Mix ingredients in a bowl and set aside
