2 fresh carrots , peeled and cut into 1-inch chunks or cut on the diagonal into 1/2-inch-thick slices
1 large onion , cut into wedges
1 medium zucchini , cut into 1-inch chunks
1 cup chopped green bell peppers , cut into 1-inch chunks
0.33 cup low sodium soy sauce
0.33 cup rice vinegar
1 tbsp fresh ginger root , grated
1 tbsp honey
1 tbsp sesame oil
3 medium garlic cloves , minced or pressed
0.5 tsp anise seed , ground
