0.5 lb fresh shiitake mushrooms , stems removed
1.5 cup cabernet sauvignon , divided (or other dry wine)
10.5 oz Consomme, beef, condensed, canned , undiluted and divided
1 pinch black pepper , cracked
16 oz filet mignon, lean (4-4oz steaks about 1 inch thick)
1 tbsp low sodium soy sauce
2 tsp cornstarch
1 tsp ground thyme
1 pinch fresh thyme (optional)
