- 1⁄2 cup Dry Vermouth
- 1⁄2 cup Dry Sherry
- Salt
- 4 cups Chicken Broth, preferably home made or organic
- 2 cups Beef Broth, preferably home made or a good organic one
- 6 sprigs Fresh Thyme, tied with kitchen twine
- 2 bay leaves
- 1 small Baguette, cut into 1/2 inch slices
- 8 fluid ounces Gruyere Cheese, about 2.5 cups
