French Onion Soup

Ingredients

  • 4 tablespoons Butter, unsalted, cut into 3 pieces
  • 3 large Sweet Onion, about 4 pounds, halved and cut pole to pole, into 1/4 inch thick
  • 3 large Yellow Onion, about 4 pounds, halved and cut pole to pole, into 1/4 inch thick
  • 2 cups Water
  • 12 cup Dry Vermouth
  • 12 cup Dry Sherry
  • Salt
  • 4 cups Chicken Broth, preferably home made or organic
  • 2 cups Beef Broth, preferably home made or a good organic one
  • 6 sprigs Fresh Thyme, tied with kitchen twine
  • 2 bay leaves
  • 1 small Baguette, cut into 1/2 inch slices
  • 8 fluid ounces Gruyere Cheese, about 2.5 cups
