- 1⁄2 cup Shallot, chopped (or yellow onion if shallots aren't available)
- 8 ounces Yukon Gold Potato, peeled and diced
- 12 cups Vegetable Stock, or chicken stock **use GF as necessary
- 1⁄2 Dried Whole Bay Leaf
- 2 sprigs Thyme
- 4 sprigs Fresh Parsley
- 1⁄4 teaspoon Cracked Black Peppercorns
- 1⁄2 cup Cream
- Salt, to taste
