Artichoke Soup

Ingredients

  • 5 large Artichoke Hearts
  • 7 tablespoons Butter
  • 1 medium Leek, white and light green part, sliced and rinsed
  • 6 Garlic Cloves, chopped
  • 12 cup Shallot, chopped (or yellow onion if shallots aren't available)
  • 8 ounces Yukon Gold Potato, peeled and diced
  • 12 cups Vegetable Stock, or chicken stock **use GF as necessary
  • 12 Dried Whole Bay Leaf
  • 2 sprigs Thyme
  • 4 sprigs Fresh Parsley
  • 14 teaspoon Cracked Black Peppercorns
  • 12 cup Cream
  • Salt, to taste
