Smoky Slow Cooker Chili

Ingredients

  • 1 pound Ground Pork
  • 1 pound Boneless Pork Shoulder, cut into ~1/2" pieces
  • 3 cups Onion, chopped
  • 1 34 cups Green Bell Pepper, chopped
  • 3 cloves Garlic, minced
  • 3 tablespoons Tomato Paste
  • 1 cup Beer, lager style, drink the rest while cooking
  • 14 teaspoon Salt
  • 3 tablespoons Chili Powder
  • 1 tablespoon Ground Cumin
  • 2 teaspoons Dried Oregano
  • 34 teaspoon Black Pepper, fresh ground
  • 6 Tomatillos, quartered
  • 2 Dried Whole Bay Leaves
  • 2 cans Plum Tomato (Italian), 14.5oz can, undrained and chopped
  • 1 can Pinto Beans, 15oz can, no salt added, drained
  • 1 can Tomato Sauce, 7.75oz can, mexican hot-style
  • 8 ounces Ham Hock, smoked
  • 14 teaspoon Salt
  • 1 12 tablespoons Sugar
  • 12 cup Queso Fresco, crumbled
  • 12 cup Green Onion, chopped
  • 12 cup Fresh Cilantro, finely chopped
  • 2 Limes, cut into wedges
