Lamb Kebabs With Mint Pesto

Ingredients

  • 1 cup Fresh Mint, packed
  • 1 large Red Onion, cut into 1-inch squares
  • 2 large Red Bell Pepper, cut into 1-inch squares
  • 2 pounds Boneless Leg of Lamb Roast, trimmed, cut into 1 1/4-inch cubes
  • 1 12 teaspoons Whole Coriander Seeds, ground
  • 12 cup Extra Virgin Olive Oil, also, 1 Tbs EVOO for brushing
  • 2 12 teaspoons Kosher Coarse Salt, 1/2 tsp for the pesto, 2 tsp for the kebabs
  • 5 cloves Garlic, 1 peeled for pesto, 4 minced for kebabs
  • 1 tablespoon Fresh Lemon Juice
  • 2 tablespoons Shredded Parmesan
  • 2 tablespoons Pine Nuts
  • 12 cup Fresh Cilantro, packed
  • 8 Metal Skewers
