- 1 1⁄2 teaspoons Whole Coriander Seeds, ground
- 1⁄2 cup Extra Virgin Olive Oil, also, 1 Tbs EVOO for brushing
- 2 1⁄2 teaspoons Kosher Coarse Salt, 1/2 tsp for the pesto, 2 tsp for the kebabs
- 5 cloves Garlic, 1 peeled for pesto, 4 minced for kebabs
- 1 tablespoon Fresh Lemon Juice
- 2 tablespoons Shredded Parmesan
- 2 tablespoons Pine Nuts
- 1⁄2 cup Fresh Cilantro, packed
- 8 Metal Skewers
