Ingredients

  • 1 - 15 oz can red or pink Alaska salmon
  • 1 - 7 oz bag mixed salad leaves
  • 2 ripe avocados, pitted and sliced
  • 9 oz roasted red peppers (bottled in oil or brine)
  • 7 oz halloumi cheese, sliced
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • tsp Dijon or wholegrain mustard
  • 1 tbsp chopped fresh parsley
  • Salt and freshly ground black pepper
  • 2 tbsp capers (optional)
