Chicken Fettuccini

Ingredients

3 Tbs Puritan oil or butter 2 chicken breasts cut into small pieces Brown chicken in oil and cook through. Remove chicken onto paper towels. To remaining oil (make sure there is still 3 Tbs oil in pan) add:3 Tbs flour, stir until smooth. Add:3 Tbs garlic powder4 oz cream cheese12 oz evaporated milk (1 can)3 Tbs parmesan cheeseCook over low heat until smooth. Add chicken and serve over pasta. *Shirley crushes salad croutons and sprinkles on top. Very yummy.I skip the chicken cooking part. I make a roux out of oil/butter and flour. Then I follow the rest of the recipe adding the fake crab at the end. Instead of fettuccini, I use cheese tortellini. I'm sure it would be healthier with whole wheat pasta. I'm going to use ff cream cheese and evap. skim milk today
