  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1 cup panko, pulsed in food processor
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • Kosher salt
  • Buttermilk Ranch Dippin' Sauce, recipe follows
QUICK PICKLES:
  • 2 cups red wine vinegar
  • 1 1/2 cups sugar
  • 1/4 cup kosher salt
  • 1 teaspoon mustard seeds
  • 3/4 teaspoon coriander seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon whole black peppercorns
  • 2 cloves garlic, peeled and crushed
  • 1 red Fresno chile, split in half
  • 6 Kirby cucumbers (about 2 pounds)
BUTTERMILK RANCH DIPPIN' SAUCE:
  • 1/2 cup buttermilk
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly cracked black pepper
