Ingredients

Meatballs:
½ pound uncooked turkey sausages, casings removed
1 pound ground turkey
1 cup fresh breadcrumbs
²∕³ cup chopped onion
²∕³ cup chopped fresh parsley
½ cup grated Parmesan
2 large eggs, lightly beaten
2 cloves garlic, finely chopped
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
Sauce:
1 tablespoon extra virgin olive oil
1 cup chopped onion
¹∕³ cup chopped carrot
¹∕³ cup chopped celery
3 garlic cloves, chopped
1 tablespoon dried oregano
1 tablespoon dried basil
1 bay leaf
½ cup white vermouth or dry white wine
3 cans (14 ounces each) diced tomatoes, with juices
2 tablespoons tomato paste
¾ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
