- 1 pound boneless beef shoulder, trimmed of excess fat
- 1 pound oxtails
- 1 pound garlic sausage, thickly sliced
- 1 pig's foot
- Herb bouquet (twigs of fresh parsley, thyme, and rosemary tied in cheesecloth)
- 2 medium leeks (white parts only), halved lengthwise and well rinsed
- 2 medium onions, chopped
- Salt and freshly ground black pepper to taste
- 3½ cups Riesling wine
- 1 tablespoon red wine vinegar
- 5 medium red potatoes, sliced ¼ inch thick
