Ingredients

  • 1 pound lean slab bacon (rind removed)
  • 1 pound boneless pork butt, trimmed of excess fat
  • 1 pound boneless beef shoulder, trimmed of excess fat
  • 1 pound oxtails
  • 1 pound garlic sausage, thickly sliced
  • 1 pig's foot
  • Herb bouquet (twigs of fresh parsley, thyme, and rosemary tied in cheesecloth)
  • 2 medium leeks (white parts only), halved lengthwise and well rinsed
  • 2 medium onions, chopped
  • Salt and freshly ground black pepper to taste
  • 3½ cups Riesling wine
  • 1 tablespoon red wine vinegar
  • 5 medium red potatoes, sliced ¼ inch thick
