  • 1 cup Kosher Salt
  • 2 Tbsp Juniper Berry , cracked
  • 2 Tbsp Black Peppercorn , cracked
  • 1/2 tsp Coriander , ground
  • 2 Tbsp Garlic , peeled and chopped
  • 2 ea Bay Leaf
  • 2 Tbsp Thyme Fresh , stems removed, leaves chopped
  • 3 ea Whole Clove , cracked
  • 1/2 tsp Nutmeg , ground
  • 1/4 cup Parsley Italian Fresh , stems removed, leaves chopped
  • 12 ea Duck Leg
  • 8 cup Duck Fat , (ask your butcher or buy in specialty food shop)
