Ingredients

8 ounces assorted mushrooms (I used a mix of cremini and shiitake)
2 Tablespoons butter
2 Tablespoons shallot, diced fine
2 Cups cream, half and half, milk, or a mix
2 sprigs fresh thyme
2 eggs
2 egg yolks
1/2 Teaspoon cayenne pepper
Salt and pepper
