  • 4 half chicken breasts, approximately 150g each
  • 1 cup fine Dried Breadcrumbs
  • 2 cups Basic Tomato Sauce (Parmigiana Variation), heated
  • 4 slices gruyere, sliced thinly
  • 4 thin slices prosciutto
  • ¼ cup clarified butter
  • 2 eggs, beaten
  • Flaked salt, to taste
  • Freshly ground black pepper, to taste
  • A small amount of butter for the baking dish
  • Grated parmesan
