Ingredients

  • 2 large parsnips, diced
  • 1/2 cup diced carrot
  • 1/2 cup diced swede
  • 1/2 cup diced celery
  • 1 onion, chopped
  • 1clove garlic, chopped
  • 30g. butter
  • 1+1/2 - 2 level teaspoons Indian curry paste
  • 2 cups vegetable or chicken stock
  • To serve; fresh coriander leaves and plain yogurt (or cream)
