Pea And Ham Soup

Ingredients

  • 2 Tbsp butter
  • 1 medium brown onion, diced
  • 1 large carrot, diced
  • 1 stalk celery, diced
  • 1 leek, washed and diced (white part only)
  • 2 cloves garlic, minced
  • 750g smoked ham hock
  • 2 bay leaves
  • 1 sprig fresh thyme
  • Pinch dried chilli flakes (optional)
  • 1½ cups lentils
  • 10 cups chicken stock
  • ¼ cup fresh coriander, chopped
  • ¼ cup flat leaf parsley, chopped
  • Flaked salt, to taste
  • Freshly ground black pepper, to taste
  • Additional stock or water if needed to thin the soup
