- 3 cups chicken, cooked and shredded
- 1/2 large red capsicum, chunked
- 1 tspn. dried oregano
- 200g kumoto or cherry tomatoes, halved
- 1/2 cup black sliced (or whole) kalamata olives
- 2 cloves garlic, crushed
- 200g bambini bocconcini
- 1/2 cup fresh torn basil leaves
- salt and pepper (to taste)
- Italian salad dressing (to coat)
- 1/4 cup finely grated parmesan cheese
