  • PECAN & COCONUT COATING
  • (t = teaspoon, T = tablespoon)
  • 4 fresh fish fillets (or thawed will do)
  • 1/4 cup melted butter
  • 1/2 t sea salt
  • 1/4 t cayenne pepper (1/2 t if you like bitey)
  • 2 T plain breadcrumbs
  • 1/2 cup shredded coconut
  • 1/2 cup finely chopped pecans
  • MANGO & PINEAPPLE SALSA
  • 1 x 450g can crushed pineapple in natural juice, drained
  • 1 large mango, diced small
  • 1/2 medium red pepper, diced small
  • 2 spring onions, finely chopped
  • 1 T red wine vinegar
  • 2 T chopped coriander
  • 1/4 t sea salt
