- thumb-sized piece root ginger, peeled
- large bunch coriander, roughly chopped
- juice of 2 limes
- drizzle sesame oil
- drizzle fish sauce
- 500g chicken breast, sliced
- 450ml chicken stock
- 2 generous handfuls sultanas
- handful flaked almonds
- 1 cinnamon stick
- 1 dessertspoon turmeric
- 1 dessertspoon ground cumin
- 1 dessertspoon currry powder (Saveur Brute if possible)
- 4 Cardamom Pods (bruised with pestle and mortar)
- 400ml tin coconut milk
