  • salt and pepper to taste
  • 4 lamb chops (2cm thick)
  • 1 tablespoon olive oil
  • 4 tablespoons minced shallots
  • 75ml aged balsamic vinegar
  • 175ml chicken stock
  • 1 tablespoon butter
