Split Pea Soup With Bacon

Ingredients

  • 30 g butter
  • 3 thick rashers of lean bacon, rinds removed, chopped
  • 1 large onion, peeled and chopped
  • 1 large carrot, peeled and sliced
  • 1 medium leek, trimmed, washed and sliced
  • 1 1/4 cups dried split green peas, rinsed and drained
  • 1 tablespoon fresh mint leaves
  • 1 bay leaf
  • 1 fresh thyme sprig
  • 1.5 litres chicken stock or water
  • 1 1/4 cups milk
  • Salt and freshly ground black pepper
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh mint, to garnish
  • Croutons, to serve
