- 1 1/2 teaspoons baking soda
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 large eggs
- 1/2 cup canola oil OR light olive oil
- 1 teaspoon vanilla extract
- 1/2 cup low fat sour cream (for dairy free version substitute applesauce or tofu for sour cream)
- 3 cups shredded unpeeled zucchini
- 3/4 cup gluten-free semi-sweet chocolate chips
