Ingredients

600 g Goat meat (diced)
1 Small onion (sliced)
1 Garlic Clove (chopped)
2 tbsp 1-2 tablespoons thai red curry paste
2½ cups Vegetable or beef stock
400 ml can coconut milk
1 Red capsicum (Seeded and sliced)
100 g green beans (halved)
4 Yellow squash (sliced)
1 tbsp Fish sauce
2 tsp 1-2 teaspoons lime juice
2 tbsp Fresh coriander (chopped)
Steamed rice (to serve)
