Pad Thai


120g dried rice noodle, soaked in water for 15-20 mins or until soft
60g prawns
2 tbsp dried shrimp, rinsed with water
40g firm tofu, sliced cube 1/2 inch width and length
2 tbsp pickled radish, finely chopped
1 tsp garlic, finely chopped
2 tsp shallot, finely chopped
2 eggs
1 cup bean sprout
1/4 cup garlic chives cut into 1 inch length (green part only)
2 tbsp chillies powder
2 tbsp roasted peanut, crushed
1/4 cup oil
Lime wedges to serve

Seasoning ingredients
3 tbsp fish sauce
2 tbsp palm sugar
3 tbsp tamarind juice
1 tsp paprika powder or chilli sauce (optional)
