- 1 cup chopped sweet onion
- 2 (15.5-ounce) cans pinto beans, rinsed, drained, and divided
- 1 (8-ounce) container garlic-and-chive-flavored cream cheese, softened
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika (optional)
- 1/8 to 1/4 teaspoon ground red pepper
- 1 (8-ounce) package hush-puppy mix
- 1/2 cup cornmeal (for dredging)
- 1/4 cup canola oil, divided
- 1 recipe Simple Summer Salsa (Recipe follows.)
- Garnish: sour cream and smoked paprika
