Spicy Bean Cakes

Ingredients

  • 2 tablespoons  butter
  • 1 cup  chopped sweet onion
  • 2 (15.5-ounce) cans  pinto beans, rinsed, drained, and divided
  • 1 (8-ounce) container  garlic-and-chive-flavored cream cheese, softened
  • 1 large  egg
  • 1/2 teaspoon  salt
  • 1/2 teaspoon  smoked paprika (optional)
  • 1/8 to 1/4 teaspoon  ground red pepper
  • 1 (8-ounce) package  hush-puppy mix
  • 1/2 cup  cornmeal (for dredging)
  • 1/4 cup  canola oil, divided
  • 1 recipe  Simple Summer Salsa (Recipe follows.)
  •   Garnish: sour cream and smoked paprika

Description

In A Small Skillet, Heat Butter Over Medium-high Heat. Add Onion; Cook For 5 Minutes, Or Until Tender.
