Roasted Sweet Potato, Ginger And Cinnamon Soup

Ingredients

  • 150 grams onion diced (approx 1 med size onion)
  • 2 tablespoons ginger finely chopped
  • 2 tablespoons garlic finely chopped
  • 900 grams sweet potato approx 2 medium sized, peeled and roughly chopped
  • 60 millilitres white wine
  • 1.5 litre chicken stock for a vegetarian version use vegetable stock
  • 1.5 tablespoons extra virgin olive oil
  • 1/2 teaspoon cinnamon ground
  • sea salt flakes
  • freshly ground black pepper
